Pizza Puffs

Pepperoni Pizza Puffs
I promised a sweet lady I work with that I would upload these awesome easy appetizers.
E-A-S-Y! and from Pinterest! Its a Rachel Ray recipe, she never disappoints, and Wes and I plan to add many more ingredients to make them different every time!

3/4 cup flour
3/4 teaspoon baking powder
1 tablespoon Italian Seasoning
pinch of salt and red pepper flakes
3/4 cup milk
1 egg lightly beaten
1 cup shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup cubed pepperoni
1/2 cup pizza sauce

Preheat oven to 375 degrees.
Grease a mini muffin pan (we used a regular size pan)
In a large bowl whisk together flour, baking powder, seasonings, salt and red pepper.
Whisk in milk and eggs.
Stir in both cheeses and pepperoni.
Let mix stand for ten minutes.
Stir the batter and divide into muffin cups.
Bake 20-25 minutes, until puffed and golden.

We make a homemade pizza sauce and serve it warmed!
Delish and EASY!

  • 2 cups fresh sweet corn kernels
  • 1 1/2 cups whipping cream
  • 1/2 tsp. cayenne pepper
  • 2 bay leaves
  1. In a 5 to 6 quart dutch oven cook bacon unitl crisp. Remove with spoon; set aside. Reserve 1 tablespoon drippings in the pan.
  2. Add chicken to pan. Sprinkle with 1/2 teaspoon each salt and pepper. Stir over medium high heat until chicken is no longer pink; remove. Add sweet pepper and onion to pan. Cook and stir until tender. Add jalapenos and garlic; cook and stir 3 minutes. Stir in flour. Cook and stir 1 minute. Add broth and potatoes. Bring to boiling; reduce heat. Cook uncovered, 10 minutes or until potatoes are tender; stirring occasionally. Stir in chicken, corn, cream, cayenne, and bay leaves. Simmer, uncovered 15 minutes; stir occasionally.
